Avocado and Grilled Chicken Salad
Servings: 1 Time: 20 minutes
Ingredients
1 boneless, skinless chicken breasts
1 avocado, ripe but firm
2 cups mixed salad greens
1/2 cup dice cucumber
1/2 tbsp chives
1/4 cup fresh cilantro leaves
1/2 tsp salt
1/2 tsp pepper
Dressing
2 tablespoons olive oil
1/2 tsp garlic powder
1 1/2 tbsp mustard seeds
Salt and pepper, to taste
Directions
Preheat your grill or grill pan to medium-high heat.
Season the chicken breasts with salt and pepper.
Grill them for about 6-8 minutes per side or until cooked through.
Once done, remove from the grill and let them rest for a few minutes.
Then slice the chicken into strips.
Cut the avocados in half, remove the pit, and slice them lengthwise.
Carefully scoop out the flesh with a spoon and set aside.
In a large salad bowl, combine the mixed salad greens, cherry tomatoes, sliced red onion, and fresh cilantro leaves.
In a small bowl, whisk together the olive oil, garlic powder, mustard seeds, salt, and pepper to make the dressing.
Drizzle the dressing over the salad ingredients and toss gently to coat.
Add the grilled chicken slices and avocado slices to the salad bowl.
Gently toss again to combine all the ingredients.
Taste and adjust the seasoning if needed.

Salad will last in the refrigerator for 3-4 days.
