Banana Oat Pancakes

Ingredients:
1 banana
1 egg
1/2 cup of oats (steel cut or rolled)
1 tsp baking powder
1/4 tsp cinnamon
1/4 tsp vanilla
1/4 cup of milk
1/2 tbsp butter
Toppings:
butter (as much as you like)
maple syrup (as much as you like)
3 strawberries
1/4 cup frozen blueberries
Instructions:
Place all ingredients in a blender and blend until smooth.
Heat 1/2 tbsp of butter in a pan on medium heat.
To know if the pan is ready, place hand hovering about 6 inches above pan and see if it is hot. If it is, than the pan is ready.
Using a 1/4 cup dry measuring cup (or by eye) pour 1/4 cup of pancake mix into the pan.
Cook each side of the pancake for 3 minutes than flip (you can also judge based on color, when the pancake is to a light brown color you can flip).
Place 3 pancakes on a plate. Place a pat of butter on each pancake along with your sliced strawberries and your frozen blueberries.
Drizzle desired amount of maple syrup on top.

Pancakes will last in the refrigerator for 1 week and the freezer for 3 months
