Banana Oat Pancakes

Time: 25 minutes

Ingredients:

  • 1 banana

  • 1 egg

  • 1/2 cup of oats (steel cut or rolled)

  • 1 tsp baking powder

  • 1/4 tsp cinnamon

  • 1/4 tsp vanilla

  • 1/4 cup of milk

  • 1/2 tbsp butter

Toppings:

  • butter (as much as you like)

  • maple syrup (as much as you like)

  • 3 strawberries

  • 1/4 cup frozen blueberries

Instructions:

  • Place all ingredients in a blender and blend until smooth.

  • Heat 1/2 tbsp of butter in a pan on medium heat.

  • To know if the pan is ready, place hand hovering about 6 inches above pan and see if it is hot. If it is, than the pan is ready.

  • Using a 1/4 cup dry measuring cup (or by eye) pour 1/4 cup of pancake mix into the pan.

  • Cook each side of the pancake for 3 minutes than flip (you can also judge based on color, when the pancake is to a light brown color you can flip).

  • Place 3 pancakes on a plate. Place a pat of butter on each pancake along with your sliced strawberries and your frozen blueberries.

  • Drizzle desired amount of maple syrup on top.

  • Enjoy!

Notes:

  • Pancakes will last in the refrigerator for 1 week and the freezer for 3 months
