4 oz of baby carrots

Notes

Sandwich will last in the refrigerator for 3-4 days.

Directions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with avocado oil.

  • In a small bowl, whisk together the maple syrup, coconut aminos, minced garlic, salt, and black pepper until well combined.

  • Place all baby carrots on the prepared baking sheet and lightly brush the maple glaze over the carrots, leave plenty of the glaze for the salmon.

  • Place the salmon fillets on the prepared baking sheet, skin-side down, and brush the maple glaze generously over the top of each fillet, coating them completely.

  • Let the salmon and carrots marinate in the glaze for about 10-15 minutes to allow the flavors to meld.

  • Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

  • Cooking time may vary depending on the thickness of the fillets, so adjust accordingly.

  • Once cooked, remove the salmon from the oven and allow it to rest for a couple of minutes.

  • Place one fillet of salmon and roughly 1 oz of baby carrots on each plate.

  • Garnish with freshly chopped parsley for added freshness and serve hot.

  • Enjoy!
