Maple Glazed Baked Salmon

Ingredients
4 salmon fillets (about 6 ounces each)
1/4 cup maple syrup
2 tablespoons coconut aminos
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Toppings/ Sides
Fresh parsley, chopped (for garnish)
4 oz of baby carrots
Notes
Sandwich will last in the refrigerator for 3-4 days.
Directions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with avocado oil.
In a small bowl, whisk together the maple syrup, coconut aminos, minced garlic, salt, and black pepper until well combined.
Place all baby carrots on the prepared baking sheet and lightly brush the maple glaze over the carrots, leave plenty of the glaze for the salmon.
Place the salmon fillets on the prepared baking sheet, skin-side down, and brush the maple glaze generously over the top of each fillet, coating them completely.
Let the salmon and carrots marinate in the glaze for about 10-15 minutes to allow the flavors to meld.
Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Cooking time may vary depending on the thickness of the fillets, so adjust accordingly.
Once cooked, remove the salmon from the oven and allow it to rest for a couple of minutes.
Place one fillet of salmon and roughly 1 oz of baby carrots on each plate.
Garnish with freshly chopped parsley for added freshness and serve hot.
